Hampton In Water Boat Show This Weekend, May 5th

WE WILL BE THERE!!!! So should you! The Jim Baugh Outdoors Hampton\Suzuki Show Boat will be in water for display at the Hampton Public Piers this upcoming Saturday May 5th. We will be located right by the Cousteau Society near the dockmasters office. We will be easy to find, just follow the smoke!!

That is right JBO will be doing an in water cooking seminar starting somewhere around noon on Saturday. Betsy will be there to help guide me and cook up what will be one fantastic boat meal. We will have all sorts of on board cooking tips and will feature grilled Sea Bass and Tile Fish as well as Barbecue Shrimp, and a fantastic desert, that will remain a surprise. The boat drink will be Pina Coladas made with fresh Coconut! This feature will air as a part of the JBO2008 program series. Here is a pic of our barbecue Mango Shrimp-YUUUM!

The fish will be fresh, and just caught off of the Jill Carrie by Captain Jim Brincfield, and the JBO crew. Jim Baugh Outdoors is shooting an offshore trip this week and will be loaded up with tons of fresh fish.

If you have ever wondered how to cook a great boat meal, then this is your chance. Were gonna make it easy, nothing to tough to fix, and can be grilled up on just about any boat with a marine grill attached. Below is a pic of the main course, fresh Sea Bass with wine, herbs onions, and JBO fav. seasonings all in one convenient aluminum boat!! Easy and great fixens!!

The JBO Show Boat will be there along with the twin 250HP Suzuki Four Strokes, and we will be glad to answer any questions about our power plant. If you have not seen this rig yet, it is one you have got to see. She is a bute!! (Pic at Top) We are now readying her for the fast approaching offshore bite!! (Spadefish as well, our fav)

400th Anniversary Of America, Hampton Welcomes The Godspeed and The Schooner Virginia

WOW, I cant tell you how exciting it was to see these ships coming into the entrance of Hampton Roads, just like they did 400 years ago when our county was discovered. My cameraman Sean and I followed the Godspeed right into the Hampton River where she tied up to the Hampton Public Piers next to the schooner Virginia. After their stay here in Hampton, the Godspeed will continue it's journey up the James River and end up in Richmond VA in late May.
Everything is going on here in Hampton this weekend to celebrate this historical event. There is a street fest with loads of musical acts, vendors, and street entertainers. Also the International Children's Festival is here in Mill Point Park, also located along downtown Hampton's waterfront.
Hampton is not only our home base port of call, but it is also the first English speaking settlement in the country. There is so much history here, and Hampton also has a new history museum and visitors center that is also located downtown.
Well, got to get going, they have tours of the Godspeed and the Virginia, and these ships I just have to get on and see.

Don't forget, next weekend is the Hampton Boat Show, I will be cooking on board the Hampton\Suzuki show boat on both Sat. and Sun. I might even have a special guest cooking with me, B, are you ready? Need some NN Recipes!!

Daytona Beach

While I was visiting Joe in Amelia Island, I popped down to see my Dad and his lovely wife Clarice in Daytona. Dad stays down here about two months a year, and flies back during his judge duty. They have been coming down here for seven years and this is the first time I have had the opportunity to come visit them. It has been a great time and we really had some great seafood last night, the Tuna was excellent.

I did not have enough time to wet a line on this trip, but did get a chance to take the Vette out on the beach, that was a ton of fun! I am getting ready to head back in time to shoot the 400th year celebration in Hampton this weekend. Tomorrow night I should stop in Savanna, then be in Hampton the next day.

Looking forward to getting back home to my boat. The cobia bite and early yellowfin bite should be happening soon, and I have a lot of rigging to do.

If you see a green flash heading north on Interstate 95, that's me, be sure to wave!!

Nassau River Fl, What to do when the wind blows and the fish don't bite???

The second day of 25-30 knot winds just drove Joe and I crazy, so we put his boat in the water and headed down the Nassau River. We new it would be to rough to fish out past the inlet, however we were banking on at least catching some Trout around the beaches. It did not take long before I started asking Joe, just where is this great seafood outlet on the island?? Because my confidence level was not very high that we would be cleaning fish anytime soon. So, after a half day of getting blown around on the water, it was time for Joe to wash the boat, and I would speed as fast as I could in the Vette and find some fresh seafood. I had this fantastic idea about a new dish I wanted to try, a Verde Grouper with Broiled Scallops wrapped in Bacon again, with a Verde Salsa.

When I got to the beach, I loaded up at the store with some HUGE Scallops, a nice three pound fresh Grouper Fillet, and I even threw in a couple of small one pound Lobster tails for good measure. Hey, if the fishing is bad, we are still going to have a feast, so that is what we did!!!

Now this is one of the best dishes you can imagine, lets start with the Scallops.

Well, first, you need to have a bad day of fishing so you can spend lots of time at the seafood store, no problem there! Get some huge Sea scallops, Old Bay, Cracked Pepper, your fav. hot sauce, and a jar of this awesome salsa made by Herdez, called Verde Salsa. It is a green salsa, however it is not to hot at all. In a bowl, put about

one cup of salsa, some shots of hot sauce, old Bay, some lemon, a little Olive oil, pepper to taste, Sea Salt, and mix that all up. Then wrap each Scallop in some thick county Bacon and use a tooth pick to hold it all together.When you put the scallops in a pan, put some wine or beer in the bottom for flavor, and it will also keep the scallops moist while cooking. After cooking at 350 for about 15 min, finish them off in the Broiler just for a minute or two. Guaranteed, this will be one of the best Scallop dishes you will ever try, FANTASTIC STUFF!!

Next, the Grouper. Now this was easy. I just made an aluminum boat and placed the large fillet inside of it. Added one cup of Verde Salsa, and one bottle of dark beer, some butter, and fresh herbs. Joe has a nice garden so we had fresh Thyme, Parsley, and Arugula, all great for Seafood.

I wrapped up the foil and put it in the oven at 350 for 45 minutes. I did the same thing with the Lobster, however I did NOT put the Verde sauce in the mix, just added a lot of fresh Garlic to the Lobster Boat. We did finish the Lobster off on the grill with some melted garlic butter.

We put together some great vegetable Ka Bobs as well as some straight Scallop skewers. Grilled them up outsode and served it all family style. The most important thing for sure was this wonderful Verde Salsa. I have seen it at most stores and can be used for a lot of things I think I will do it on Chicken when I get back to Hampton, it is just GREAT stuff, TRY IT!! Needless to say, this was one fantastic dinner, and the left overs made for one award winning omelet!!! So when the fish are not biting, it does not mean that we are not!!! We cooked up a feast all afternoon and had a ball.

Next up is Daytona Florida. I will leave today to go visit my Dad and his lovely wife Clarice Baugh. They stay down here a couple of months a year. I liked last nights dinner so much, I might try to fix it for them tonight.

Amelia Island

Hello everyone!

Down here for a quick trip in Florida, had planned on heading back to Delray and Key West however finished my buiz, and cutting my trip short. One of my best friends and the first JBO advertiser (19 years ago) Joe Dudley lives here on Amelia Island, and I am visiting him for a few days over the weekend. Joe was GM of a large marine dealer when I met him and was one of the first Suzuki Marine dealers in Virginia.

Joe has three boats and we are planning to do some offshore fishing, however today she is blowing 30 knots with a little rain. So, we might try a little surf fishing, or just surfing! LOL. I was hoping to post some nice fish pictures today, due to weather, we have just been eating steamed Clams and cracked crab at this great little seafood bar somewhere south on Amelia Island. We have a pic above of the JBO show Vette parked in front. Hopefully the weather will break and we can get some good fish pics up. The Trout bite at night has been good right off Joe's dock, so we might try that.

I will wrap up here and head back in time for the 400th year celebration in Hampton next weekend, we will be shooting the event for three days for Jim Baugh Outdoors TV

My Sweetie Turns 18!!!!!

April 18th my sweetie Casey Baugh turns 18 years old!! I am posting this today because I will be on the road this week in FL, and fortunately celebrated with her today before I left. I can hardly believe my daughter is now turning 18, and leaving in only a few months off to college.

Gee, it sure does make me feel old!!!! Poor Too!! LOL

I can not be thankful enough for having the two best kids in the world. My daughter, is a 120% girl, all girl, with no less that 1,000,000 friends! Have the grocery bill to prove it. Casey has fished with her dad since she was a baby, she likes the water, but I think likes the hair salon better. Like I said, she is very much the young lady, handling fish was not her favorite thing to do in life. Now if you want to talk about the mall, that is something she is well versed at!!

It is true that Casey has me wrapped around her finger, that is ok, she has not been to rough on the old man. Great kid.

Thanks for being the best daughter a pop could ever ask for, and have a great birthday on Wed.

Happy Birthday Dad!!!

My Pops and co-founder of Jim Baugh Outdoors TV turns 73 years old today. I am fortunate to have a great dad who to this day is still a working judge, special justice of the peace for the city of Richmond.

When my dad is not in hearings, he is usually on his waterfront home on the Piankatank River with his lovely wife Clarice Baugh. Dad has his boats right on his dock including a jet ski that runs 70mph up the Dragun Run. AND-If you ever see a 73 year old man hauling down the river in a Kenner 23V with a 200 merc, that's my Dad, be sure to wave to him.

In case anyone is wondering what I got him for his birthday, well, it is the same thing I get him every year for as long as I can remember. The best dad deserves the best scotch, so once again it is a bottle of Chevas Regal for "Big Baugh". That is what my kids call grandpa.

Well, a big happy birthday to you, love ya dad, and try to keep the jet ski under 50mph!!

Going, Going, Gonna Be Gone!!

Hello everyone!!

Here is a lovely pic of the Jim Baugh residence for the past 11 years, well, for three I have lived on a boat. But now that my sweetheart daughter is off to college, the beast of a house is on the market. This is where I built a super TV studio as an addition to the house, back before lap top editors became the norm, we used to have to house a lot of equipment.

She has been an awesome home, three acres in the Salisbury area in Midlothian with a huge Salisbury Lake view, just wonderful. Big Florida room and back deck the size of Kansas. This 4500 sf contemporary has the most beautiful hard wood floors you have seen throughout the entire first floor. Single plank wide masterfully shellacked hard wood, a must see. The floors, three acres and lake view is what sold me on this house in the first place.In case you have not guessed, I have been doing yard work for about 38 years, no more!! It is condo by the beach for Jim!! That is it. I will set up a permanent studio in Hampton Virginia, and of course still base out of the downtown Hampton area.

If anyone is lookin to buy in the Midlothian area, give me a buzz, we have been getting tons of calls and already have had a ton of showings. There will be an add in the Richmond Times Dispatch Sunday April 2, so for those of you who are lookin to get on the lake in Salisbury, here is your chance. I moved to Midlothian some 11 years ago not only because it is a fantastic area, but it also has about the best school system in the state of Virginia. Now with the completion of 288, you can be in the west end in only about 15 minutes, and we are only about 10 minutes from Chipenham Pkwy. Just super access. Please buy!!! I already have three condos with my name on it!! LOL .Have fun everyone, another beautiful weekend in Hampton this weekend, getting the boats ready for another fantastic season!

JBO Show Vette at Vetts at Waterside Sixth Annual Show

Hello everyone!
I just got back from one exciting show at Waterside, the sixth annual Vetts at Waterside featured over 120 awesome Corvettes. The Jim Baugh Outdoors 1996 C4 show car was car #107 and we were displayed on the waterfront side near the water taxi. The turn out was very good and there was of course plenty of Vette enthusiast. It was great to meet some fans of our show during the event, we had a lot of folks stop by our car booth.

We had just in time for this show installed the new factory leather interior for the c4. The job really turned out fantastic and was our last major job for this restoration. The show vette is ready for it's next Key West tour commin up in May.
The only bad thing about this show was that I was trying to recover from the worst flu I have ever had. Don't think old JB has been sick in over two years, but boy did I play catch up this week, it has truly been a real bear. So with help of another thousand milligrams of vit C, I think I will be cured in a couple more days!! Thank the Lord.

Next show for the JBO Vette will be the Hampton Annual Corvette Club Show. We will update as to the dates soon. Back to editing, Jim Baugh Outdoors starts it's 2007 annual broadcast April 1st, our 18th year of broadcasting. No wonder I am tired!

Hampton Boat Show

It was good to see Doug Whalen at the Whalens\ Suzuki booth at this years Tidewater Boat Show in Hampton Virginia along with Terry Chones regional director for Suzuki Marine. The show was held at the Hampton Roads Convention Center and was set up just beautifully, great show. There is so much light in that building the boats really showed well. This is an annual show and one you don't want to miss! The center is located directly across the street from the Bass Pro Shops in Hampton Virginia as well as the Hampton Coliseum. Next up Jim Baugh Outdoors will be appearing at the Downtown Hampton in-water boat show and will be hosting a cooking seminar May 5th along the downtown Hampton waterfront. Live From Key West

The drive from Marathon to key West (with the top down of course) has got to be one of the most beautiful scenic trips one could ever take by car. The fact that we are still in the USA with this unbelievable water, it is just hard to believe. Key West has a lot to see, and we did do Duvall street in grand fashion. We have some pics here of some of the more legendary places to visit while in Key West, right now- there is a huge art show going on that has really been something to see. The nautical art is just amazing! Great show!
We look forward to getting out on the water tomorrow with Suzuki fishing guide Nick Malinovski. Nick fishes out of Hurricane Hole and is known for being one of the best charters in the area. If you are going to be fishing down here during prime season like now, be sure to book your charter well in advance.
FISHING UPDATE: Just got back from Key West fishing with Captain Nick! Awesome day full of nice Yellowtail and a real nice Bonita! We released everything and had an enjoyable time back at the Hurricane Hole Marina. Captain Nick runs a great 28 footer powered with twin Suzuki four stroke engines. A great ride, and captain Nick and his fishing team really know the waters here in Key West. I highly recommend them, for either a full or half day charter. The Yellowtail action was red hot today! Commin back in August for some Mahi!! Cant wait!
